Stocks and Soups: Learn techniques on making Stocks and what pre-treatments and categories are needed to make different styles of soups, and stews.

Fish: Learn about different pretreatments and cooking methods for fish.  Fish is very delicate so proper cooking technique is necessary. First we explore the characteristics of different fish, then which cooking methods work most successfully for them.

Alternative Sweeteners and Simple Desserts: I was taught that with fat, sugar and a binder you can hardly go wrong.  Learn about different characters of whole food sweeteners and the functions of each category in making desserts.

Meal Composition: Prerequisites;  Soup, Alternative Sweeteners and one protein class.  In planning a meal you need to be aware of having a nutrient balance as well as placing attention on textures, tastes, colors, numbers, and the season.  You will experience a meal that is balanced in all of these topics.
