Winter Class Schedule

Part l: Primary Food Groups

Be introduced to the language of cooking. A  technique of cooking without recipes that is  unique to the School of Natural Cookery.

You will  observe techniques of cooking with “whole dish  grains” (millet, buckwheat, quinoa, Jobs Tears  and more) plus sumptuous sauces, luscious vegetables, and both basic and elegant beans.

15 hours ( five 3 hour classes)

Dates:   Tuesdays  February 7, 14, 21, 28 March 6

Cost:    $279.00  $50.00 deposit required to hold your space.

Workbook:  $50.00  highly recommended - must pre-orderworkbook

I have workbooks for student to view along with class if you choose not to buy one.

Stocks and Soups: Learn techniques on making Stocks and what pre-treatments and categories are needed to make different styles of soups, and stews.

Alternative Sweeteners and Simple Desserts:

I was taught that with fat, sugar and a binder you can hardly go wrong.  Learn about  different characters of whole food sweeteners and the functions of each category in  making desserts.

Part III: Improvisation

Become fluent in the language of cooking.  Improve your skills through hands-on improvisational cooking.  The unique techniques of the School of Natural Cookery will make cooking easy, fast and precise while supporting your Spirit.  Take this part over and over again to explore new horizons.  Prerequisite Part I

Dates:  March 10th or March 24th

Time : 10:00 - 4:30

Cost:  $100.00 single $175.00 double (signing up together)

Part II:  Balanced Meals

Employ the language of cooking. You will study technique and theory of cooking soups, proteins, (vegetarian or animal based) and simple desserts with unrefined sweeteners.  Learn meal composition with focus on balancing nutrition, energy and aesthetics.
